Peas With Shallots and Lemon: A Recipe

This fast and simple recipe will be a hit at your table. Visit your local farmer’s market for freshly harvested peas grown to perfection in the summer heat, or use frozen peas instead.

Ingredients

2 tablespoons extra virgin olive oil

2 onions, chopped

1/8 teaspoon dried crushed red pepper

1 pound thawed (if frozen) or fresh green peas

1/4 teaspoon kosher salt

1/8 teaspoon ground black pepper

1 teaspoon zest of lemon

Directions

  1. The oil is heated over medium heat in a pan of medium size.
  2. Add the shallots and cook, stirring often, for 6 to 7 minutes, until soft and caramelised. Stir in the red pepper flakes. Add the peas, salt, pepper, and two tablespoons of water to the pan.
  3. Cook, stirring often, for about 3 minutes, or until the peas are cooked through and soft.
  4. Add the lemon zest, then serve.
