Ingredients
2 tablespoons extra virgin olive oil
2 onions, chopped
1/8 teaspoon dried crushed red pepper
1 pound thawed (if frozen) or fresh green peas
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 teaspoon zest of lemon
Directions
- The oil is heated over medium heat in a pan of medium size.
- Add the shallots and cook, stirring often, for 6 to 7 minutes, until soft and caramelised. Stir in the red pepper flakes. Add the peas, salt, pepper, and two tablespoons of water to the pan.
- Cook, stirring often, for about 3 minutes, or until the peas are cooked through and soft.
- Add the lemon zest, then serve.
