This tasty dessert is a classic, and it’s easy to change the ingredients to suit your tastes. What’s the big surprise? Plain Greek yogurt keeps the cookies from getting dry. We’ll keep it to ourselves.
Ingredients
- 1 cup of flour made from wheat
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Brown sugar, 1 cup
- 1/4 cup plain Greek yogurt that is fat-free
- 2 tablespoons canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cups oats, either raw or rolled.
- 1 cup dried raisins
Directions
- Turn the oven on to 350° F. Put parchment paper on two cookie sheets.
- In a small bowl, mix together the flour, baking powder, cinnamon, baking soda, and salt.
- In a large bowl, mix together brown sugar, yogurt, oil, an egg, and vanilla. Mix the flour and water to make dough.
- Mix in the raisins and oats.
- Drop round teaspoonfuls of the mixture two inches apart on cookie sheets that have been prepared.
- Bake for 12 minutes, or until just a little bit browned. Do not overbake.
- To eat, slide the cookies off the parchment paper and onto the counter.
