This combination of sweet carrots, tart cranberries, and savoury walnuts will not only gratify your taste buds but will also look lovely on your dinner table. Additionally, this dish may be simply doubled for a big audience.

Ingredients

  • Juice from one orange (or half a cup of 100% orange juice)
  • 1 pound of carrots, cleaned and sliced into 1-inch pieces (or 1 lb. baby carrots, rinsed)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped walnuts from California
  • 1/4 measure of dried cranberries

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Combine all ingredients except the nuts and cranberries in a large bowl. Blend well.
  3. Spread the blended ingredients on a baking sheet. Bake for 15 minutes. Incorporate the walnuts and cranberries. Continue baking for 10 minutes.
  4. Verify if the carrots have reached the required softness.
