Looking for a more nutritious alternative to processed nuggets? You’ve discovered it. These crunchy, handmade nuggets are an easy way to sneak in additional vegetables at any meal and a great finger treat for the entire family.

Ingredients

  • 1 cauliflower head (about 6 cups)
  • 4 cups florets broccoli
  • 1 cup carrots, shredded
  • 2 cups mozzarella cheese (half skim)
  • half a cup of skim milk
  • 1 pound of bread crumbs

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Chop broccoli, cauliflower, and carrots in a food processor until finely chopped. Combine the veggies.
  3. Mix in the milk and mozzarella cheese until well combined.
  4. Coat a cookie sheet liberally with cooking spray.
  5. Shape the ingredients into a nugget shape using your hands.
  6. Place each nugget on a baking sheet and coat with bread crumbs.
  7. Bake each nugget for 20 minutes, flipping halfway through.

Serve with your favourite dipping sauce.
