- 1 cauliflower head (about 6 cups)
- 4 cups florets broccoli
- 1 cup carrots, shredded
- 2 cups mozzarella cheese (half skim)
- half a cup of skim milk
- 1 pound of bread crumbs
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Chop broccoli, cauliflower, and carrots in a food processor until finely chopped. Combine the veggies.
- Mix in the milk and mozzarella cheese until well combined.
- Coat a cookie sheet liberally with cooking spray.
- Shape the ingredients into a nugget shape using your hands.
- Place each nugget on a baking sheet and coat with bread crumbs.
- Bake each nugget for 20 minutes, flipping halfway through.
Serve with your favourite dipping sauce.
